I bought a gazillion packs of pesach noodles cuz I was so excited when I saw them and I'm addicted to pasta.
Any recipes to make them taste less potato-ey?

It's gummy - just is what it is.
Make it fresh according to package instructions and toss with something tasty and serve immediately.
