I use a crepe maker for lukshen because it turns out the thinnest and most similar to real noodles. Otherwise I feel like I'm eating scrambled eggs in soup. For blintzes I make slightly thicker crepes in a small non-stick frying pan.

Eggs, oil, potato starch, water, kosher salt. I'm on the couch but I'm sure someone here can chime in with exact amounts.

My mother's recipe is just egg, slightly thinned with a drop of water, and a pinch of salt. She makes them in a plain old oiled frying pan and they come out almost paper thin and perfect. When I do it it looks like an omelet. It isn't the recipe so much as the skill level, lol!

6 eggs, a quarter cup of potato starch dissolved in a half a cup of water and a little salt. Mix well. Heat a little bit of oil in a frying pan. When the pan is hot, add a little of the egg mixture and swirl it till the entire frying pan surface is covered with the egg. Fry for a minute or two until it is slightly brown and then flip it over to the other side for another minute or two. You may need to add oil as you go along. I may try it with the cooking spray this year instead of using the oil.

It really is not that big a deal. Don't be nervous. Making the pesach lokshen has been my job since I was a teenager. I am now BH a grandmother and have been making them for years. Put up a couple of frying pans at a time and it will go much quicker. I make enough for both sedarim. I would say the six eggs will be enough for eight people. I double the recipe for the two nights.

A wisk. A hand mixer or blender makes too many bubbles. Bubbles are holes.

The bubbles disappear within seconds, in my experience.

You notice if you're making blinzes.

5 eggs
1 cup water
