Dips with the fish.
Egg salad and liver with the salad.
Cold cuts or grilled chicken with the cholent.
Roasted veggie platter.
For shalosh seudos you can do peppers stuffed with tuna.
Deviled eggs.
Guacamole.
3 salads.
Cheeses and cheese spreads.
Potato / sweet potato salad.
Cut fruit.

Shalosh seudos needs to be early bc you aren't supposed to eat a full meal too close to the seder, right? How do people plan to finesse that?

Our rabbi says you don't have shalosh seudos in this case.

In order to be yotzei shalosh seudos and still have an appetite for the second Seder, our rav says to wash for lunch and have fish course and bentch. Then wait half an hour and have the rest of the meal.
(If you do that, I guess the matzah rolls with cream cheese that I suggested above will have to wait until second days! )
