I do these with 2 cap almonds and 1 cup coconut and they are great but try your own favourite combinations.

Coffee cake

9 eggs separated
1 1/2 cups sugar
1 cup potato starch
2 TBSP coffee granules (dissolved in a little hot water)
Beat egg whites with 1 cup of sugar till stiff. Add ther rest of the sugar and yolks. Gently mix. Add potato starch and coffee. Mix very gently and very little.
Pour into 9x13. Bake on 350 for about 45 minutes.

I suppose if you don't use coffee you can probably flavor with freshly squeezed orange or lemon juice.

Did you taste them yet - any reviews? Looks good. I wanted to make a muffin type snack.

Made this twice in a countertop oven. After 30 minutes the top starts to burn and turn black.
Is it the temp or do I need to bake less time?
Otherwise very good recipe.

I made one of each recipe. The yield is not great but might get super expensive to double.

It seemed to bake a lot faster than the time indicated and I personally found it a tad salty but otherwise they're delicious!
