Any suggestions on what I can do now to make the salt less impactful?

You can try rinsing it, some if the salt flavor will come off

Just run under cold water before slicing?

Yes. Happened to me on sukkos and rinsing helped a lot

Thanks. It did help. Hopefully the sauce I added back in top didn’t reintroduce all the salt!

Peel some potatoes and simmer them with the meat and sauce. The potatoes will absorb all the excess salt, and be tasty, too.

Corned beef and potatoes is very Irish. Just add some cabbage, and you're ready for "The wearin' o' the Green"!
