Fresh & Easy Passover Apple Pie

The recipe directions from cookkosher.com seem to be off.
Can anyone look this up in the Fresh & Easy cookbook and clarify what are the extra eggs to pour on top of the apple batter? Does it just mean any extra egg mixture that remains in the mixing bowl after pouring out the apples?

Apple Pie
5 granny smith apples
1/2 cup potato starch
5 eggs
1/2 cup oil
1 cup sugar
3/4 teaspoon cinnamon
1 teaspoon vanilla sugar
Topping
1-3/4 cups coarsely chopped walnuts (not ground)
1/3 - 1/2 cup sugar

Preheat oven to 350F.
Peel and core apples. Slice apples into rings.
In a large mixing bowl, combine the potato starch, eggs, oil, sugar, cinnamon and vanilla sugar. Add apples to the bowl and coat well.
Combine walnuts and sugar. Place half of the topping on the bottom of a round pan. Layer apples neatly. Pour remaining egg mixture on top; let mixture settle into the apples. Sprinkle with remaining topping.
Bake uncovered for 1 hour or until golden brown. If top browns too fast, cover with foil and continue to bake.

I have a different apple Kugel recipe that this is what you do. I'm assuming the same here.
Lay the sliced apples in the pan first then took pour the batter (the egg mixture) over the apples and it seeps into the crevices as it bakes.

I see now that she writes add apples to the bowl and coat well. I'd leave that part out

Or she means dip the apples into the batter, until coated well. The. When layering it lay them out nicely but don't pour it out. This will leave you with a remaining batter which she then says to pour over.

Eggs in my apples wasn't to my liking. I also prefer different nuts.
