Op, it all depends on what you call healthy
Rice and beans is considered healthy in a lot of ppls eyes, if would eat that I’d be layed up in bed for days.
For me animal fat is healthy, butter, shmaltz, tallow, etc. Grains, legumes, sugar is not. Also I limit my dairy consumption.
Please specify your family’s definition of healthy.
Also, how much time do you have to cook?
A healthy dinner for me
Hamburger wrapped in lettuce with pickle onion tomato
Mashed cauliflower
Broccoli
Shawarma chicken- seasoned at home w onions and peppers
Cauliflower rice
Israeli salad
But it takes time to chop veggies

This recipe works every time, super easy to make.
1 T vegetable oil
1 lb lean ground beef
1 large onion, diced
1 large clove garlic, minced
1/2 c chopped green pepper 4 T chili powder
1 tsp salt
1/2 tsp sugar
1/4 tsp ground cumin
pinch crushed red pepper flakes
1 (28 oz) can whole tomatoes or diced tomatoes
1 (approx. 14 oz can) tomato sauce
1 (15 oz) can kidney beans, rinsed and drained
Heat oil in large skillet over medium-high heat. Brown beef, stirring until it crumbles. Drain fat. Add rest of ingredients. Bring mixture to a boil, then let simmer for 45 minutes

Everything bagel salmon
Fish Tacos
Eggplant boats
Korean beef bowls
Oven baked gnocchi and veggies
Sheet pan sausages and potatoes (Empire chicken sausage is great)
Also really recommend an Instant pot. Its great for fast meals.

Hot dogs should be saved for an absolute emergency, when you just can't manage anything else. Same with the fish sticks.
Mayo can be healthy if you make it yourself. There are a lot of good recipes online, and you can control how much sugar goes into it. Store bought mayo is very sweet. If you make your own you can add herbs, spices, or garlic to make it extra yummy. |
Homemade mayo is not healthy because of the salmonella risk.

I make a lot of recipes that are just a sprinkle of cheese like bean or fish tacos, pasta, risotto, fish sandwiches

This! I put walnuts, peanuts, dill and parsley into a blender, then add breadcrumbs, spices and an egg, slather it on top of salmon, into the over for 20-25 minutes and it's SUPER tasty!

Pita, smear with pesto + hummus/tuna/other, and have your kids fill it with their favourite veggies. They'll eat it!

Google sheet pan meals-- easy and many are healthy. Very little cleanup since it's all on one pan. I like sheet pan fajitas (https://www.budgetbytes.com/oven-fajitas/). For even faster weeknight prep, cut chicken ahead of time and freeze in marinade. You can also prep the veggies the night before.
