I used Best (Grain Brain brand in the white bag with blue lettering) Whole Spelt Flour once and the texture seemed different than the texture I get with the Vita-Spelt Whole Spelt Flour (red bag).

Yes. I’m trying to figure out the difference. I’ve been using both for years.
But this is the wrong website to post such questions. Majority of ppl here will consider you a quack for using spelt...

I know what you mean!!! Every purveyor of whole spelt in Israel has a completely different texture!!!
I personally think it has to do with the grinding. I have a friend who grows and mills his own spelt, and his flour looks the same, but produces a MUCH coarser bread than the larger factory in the Jordan River Valley.
Maybe the source of the grain also matters? I wonder if spelt quality varies by growing location.

I consider myself a quack sometimes but not because of the spelt, not at all. That doesn't rank to be a quack here. You have wayyy more things to check off before you get to spelt.
I honestly like the ones in the red bags, they're much cheaper usually and I get excellent results from it. My spelt baked goods taste just as good as the wheat ones.

I get excellent results with the Issacs wonder mills.
Plus, it’s already sifted.
How do you all sift spelt flour?

I asked a Posek (everyone can ask their own) who said its impossible to sift Whole Spelt.
Its piece-y.
