Pita, falafal and salads is a nice option I often do on these long shabbos afternoons.

subway sandwiches with cold cuts.

Make enough cholent for lunch and shalosh seudos.

Fancy cheeses (brie, camembert, good cheddar etc) with gourmet bread, tomatoes, leafy salad, avocados, butter if you won't be fleishig. And ice cream.

Pasta with ketchup (one DC eats this weekly)
Chease blintzes
Chease cake
Salads/cut veggies and dips
Cut fruits (I serve this before shabbos party)
Yogurt And granola

We usually do fleishigs. For pareve we do potato borekas, salads, and dips.

Otherwise I throw leftovers on the blech or I'll make sure to have grilled chicken around.

Yum! In the summer this meal is the easiest and most delicious.

A variety of salads including dairy salads with halomi cheese, fresh mozzarella ect.

When you make you challah you can make garlic knots and onion boards. You can even make pizza or cheese rolls.

A cheese board with a variety of cheeses (for family friendly ideas- cheese sticks, cheese slices, Syrian cheese, fresh mozzarella ect.), crackers, nuts, olives, cherry tomatoes.

Ice cream or cheese cake for dessert.

Fruit smoothie.
Different Salads like ramen noodle salad. Sugar snap pea/mushroom salad. Cole slaw chow mein salad. Pasta salad. Potato salad. Mushroom egg salad. Avocado salad. Ceasar salad with grated parmesian cheese or shredded cheddar cheese.
Lukshen cheese kugel could be served cold.
Fruit mixed with yogurt/sour cream or cottage cheese.
Blintz pie/cheesecake
Iced cappuccino/ ice cream
Bundt apple cake can be served cold.
Kokosh cake with milk.
