Hi, I'm really embarrassed to show my ignorance, but tomorrow I have to teach a group of non religious kids about Yom Haatzmaut (not in Israel) ages 5 to 8,
Could someone give me a brief summery on some points that I could tell them.

It's Israeli Independence Day.
I would draw parallels between the Revolutionary War and Israel's War for Independence. You can talk about how great Israel is on the world stage (antibiotics, science, etc.) and in chesed (with its enemies, Syria, being on the spot with rescue workers in world tragedies).
Then - budget serious time for this - bring books like Take Me to the Holy Land, Picture This, Motti's Trip to Yerushalayim. Imprint on them that this is where it's most at Jewishly. Segue into the kosel and our longer history as Jews in the Jewish Land.

Can you bring Israeli snacks? Bamba, crembo, or whatever else you can find?
Do Israeli dancing?
Look up some of Israel's technological achievements eg pill cam, iron dome, Waze and teach about that?
Make flags? Or a map?
Show a video tour (there are plenty on line)?
Teach a couple of Hebrew phrases?
