We had a beautiful time in denver. We did a airbnb as we came with children and wanted outdoor space for kids to play. There isnt really a “best place to eat” theres only one or two places- brooklyn (!) pizza for milchigs and east side deli for fleishigs unless theres more I’m forgetting. We went to cherry creek reservoir, the Denver zoo, mists of the caves and garden of gods. Lucky you!!! My kids want to go back!
Edited: it was caves of the winds!

The main kosher supermarket is called East Side Kosher Deli. There are also larger supermarkets that carry kosher products.

We went last year with our kids and had a wonderful time! There are two restaurants available (both had very decent food). For Shabbos we went to Vail and had an incredible time. We rented a condo right near Chabad so that my husband and sons had a minyan. We brought some prepared and frozen food from the Eastside Deli and bought some other things in the local Walmart. Denver's local supermarkets have a lot of Kosher options as well. Colorado was one of our favorite vacations as a family. Definitely a great choice!

The dairy restaurant served one of the best calzones ever.
We also liked the Denver Botanical Gardens and the Denver Museum

We loved Glenwood Caverns Adventure Park, Royal Gorge, Garden of the Gods is nice also.
The Air Force Academy was pretty cool too. Whenever we went we tried coordinating the times that they march to lunch. it's cool.
The supermarkets that most ppl shop in is King Soopers and target thats right near each other which are both near the Denver Lake.

Colorado is amazing, and you've gotten some great ideas here, but it's a large state. We've gone 3 times in the past 10 years, visiting different parts of the state each time. If you're only going for a few days, I'd probably stock up in Denver when you get there, then head to Estes Park, the gateway town to Rocky Mountain National Park. There are tons of hotels and AirBNB options. Spend a few days enjoying its natural beauty.

If you want other options, look into Colorado Springs, Vail, Glenwood Springs, even Aspen, but these are all spread out and far from one another, and it would be a shame to spend your whole time there in transit.

eldorado canyon, steam boat springs and garden of the gods.
They have 2 kosher restaurants, kosher bagel store and some krogers (kingsoopers) have kosher bakeries. The cakes and doughnuts are chalav stam but the breads and bagels are parve and pas yisroel. They do also sell parve cakes.
Please make sure to plan your shabbat plans in advanced. The community always gets pressured to host people last minute. They are happy to host but not happy about getting texts on fridays about people who are "stranded". I believe they do have hotels with in the eruv.
