I make this every week!
Cut up into spears and mix with mushrooms, red peppers, onions, garlic, salt+pepper, oil. Roast or grill.
Then I put them in a salad with lettuce and deli. I use a regular caesar dress, but I add mustard and tons of basil (TONS. I love basil yummmm).

I do green beans, mushrooms, red onion, zucchini spears (thin) and sometimes eggplant. Mix in olive oil, salt, pepper, frozen garlic cubes and a frozen basil cube. roast on a cookie sheet at 400 for about half an hour.

This is not a salad. But I made this today. I circle slice zuchinni and sautee it in a bit of olive oil. Add a can of tomatoe sauce and some sweetener (sugar or Splenda) cover and let simmer until zuchinni is soft.

Sweetened Emerald Zucchini:

1 lb zucchini
1/4 cup sugar
2 Tblsp water

Boil the water and sugar together until sugar dissolves. Meanwhile, trim zucchini, quarter it lengthwise and cut into 1 inch pieces. Add the zucchini to the syrup and cook covered for 8-10 minutes until tender but not mushy. Transfer to a bowl and serve at room temperature.

Optional: Garnish with chopped fresh mint or parsley.

I made this last Shabbos: I heated up a pot (the kind that you can kasher for pesach by hag'ala) for about three minutes, added a tbsp of soy oil and tossed in 5 med zuccini cut in quaters and thirds. It seared them to brown in seconds and made a bit of a mess, but I stirred it around and added some water, covered and lowered the flame for seven more min. They became semi transparent. Salt and ground black pepper. Zehu! It was good ☺

I can't believe no one said ZOODLES! I spiralize my zucchinis and use them as a pasta substitute ; I especially love them with pesto. Yum!

zucchini kugel.

sauteed cubed zucchini with onions/spices beat in egg at end

sliced round discs with oil & spices in oven

For dairy.
a layered letcho.
cubed zucchini with onions bottom of pan, add cubed potatoes, tomatoes & cheese. no mixing. first let zucchini cook for a while before adding
