Help me plan and freeze for shavous 2019

Here goes- im 10 weeks pregnant and I have a 2 and a 4 year old. I got so tired of the drama at my inlaws and decided I really dont want to go there even thou my children really love spending time with their cousins there. I mentioned to DH that if we had company maybe it would be easier to be home for 3 days... so that's how were ending up with a couple and their child the whole time. And an additional couple by 2 meals...
I can definitely pull this off, ive done crazier things in the past. Problem is because of the dairy on shavous freezing in advance is problematic. Because of that I think im going to make 5 meat meals and 1 dairy..
Please share your favorite yom tov dishes that can be prepared and frozen on advance as well as any other tips to alleviate some of the stress that's bound to come along with all that im juggling... TIA

Sesame chicken
Brisket with sauce
Pepper steak
Corned beef with glaze
Any kugel except potato (IMO)

Dairy you can freeze lasagna and cheesecake made with full fat block cream cheese.
Enjoy!! Nothing like YT at home!

Eggplant Parmesan
Lasagna
Chocolate cheese muffins
Cheese blintzes
Cheese florets
Cheesecake
All these freeze nicely

Pot Roasts cooked on the stove top or baked in the oven
Potatoe knishes
Orzo
Potatoe Kugel, lukshen kugel, two colored Kugel (zuchinni and carrot)
All types of bourekas/turnovers
broccoli mushroom Quiche
Desserts and cakes

Thank you!! Can you share your sesame chicken recipe ? I forgot to mention the company weeks bet yosef which is hard for me to get so chicken dish ideas are really appreciated !

I recommend preparing all chicken dishes raw and only bake or cook right before Yom Tov or on Yom Tov. The chicken develops a rubbery consistency otherwise.

Thank you thunderstorm! Whenever you have a chance can you share your chocolate cheese muffins? And blintzes?
Also how does lasagna freeze well? Raw?

I cook the lasagna noodles and then layer it with the cheese and sauces in a pan , cover well. Put pan in a ziplock freezer bag or other plastic bag that is sealed well. Freeze raw and then defrost and bake on Yom Tov or erev Yom Tov.

Chocolate Cheese Muffins from the Family First Magazine in Feb. 2010

Chocolate batter:
3 Cups flour
2 Cups sugar
1/2 Cup Cocoa
2 tsp baking soda
1/2 tsp salt
2 Cups milk
2/3 Cup oil
2 tsp vanilla extract
(Note there are no eggs in this mixture)

Cheese Filling:

16 oz unwhipped cream cheese
2/3 Cup sugar
2 eggs
1 Cup mini chocolate chips

Preheat oven to 350
Combine the dry ingredients. Add milk, oil and vanilla. Mix all together until smooth. Spray muffin pans with a generous coating of cooking spray. Pour 2-3 tablespoons of batter into each muffin cup or until two thirds full.

Mix cream cheese with sugar until combined . Add eggs one at a time and keep mixing. Once the consistency is smooth mix in the chocolate chips by hand. Place 1 Tbsp of cheese filling in the center of each partially filled muffin tin.

Bake 20 min. Allow muffins to cool before removing them from the pan.




Cheese Blintzes from the Balabustas Choice

Crepes:
2 eggs
3 Tbsp sugar
1 1/2 Tbsp oil
Pinch salt
1/2 Cup flour
1/2 Cup milk

Beat eggs lightly with fork
Mix with sugar, oil and salt. Add flour and mix until smooth. Add milk while mixing constantly until smooth.

Heat a drop of oil in frying pan (I use cooking spray) pour 2-3 Tbsp of batter into heated pan and fry on both sides until golden brown color forms. Continue frying until entire batter is used.

(I have found that I need to double the batter for the amount of cheese filling. It makes around 12 or a bit more of blintzes)

Cheese Filling:
1 pound cottage cheese
1 7 and 1/2 ounce J & J farmer cheese
1/4-1/2 Cup sugar
1 vanilla sugar
Dash of cinnamon

Combine all ingredients and mix.
Place a spoonful of filling in center of each crepe and roll into a blintz

(I male and freeze the cheese filling in advance and defrost fully right before make the blintzes. I prefer to have fresher crepes which I prepare on erev Yom Tov or Yom Tov and then fill them with the already prepared filling)

Reminder: 2 of those 6 meals are on shabbos!
Friday night making my reg. shabbos food, roasted chicken/rice and grilled veggies or kugel
Shabbos lunch either a cold meal or chulent( depending on the weather!)
For yom tov, place frozen raw roast with spices/onions/garlic in an aluminium pan cover well with double foil and bake overnight on 250. You can do that on yom tov if your oven stays on! House smells amazing in the morning, delicious!

Don’t make huge meals. If you leave an oven on, fish and pizza are easy to cook on yomtov ( especially if you can buy premade crusts or dough). Crustless quiche freezes well. Meatballs freeze well.

I usually freeze everything...
I'm always nervous when trying new recipes
if they will freeze well
so thats where im up to
but I plan on figuring out a menu
so I can start

You can freeze
Cheese bourekas
Veg/Cheese quiche in a crust
Ravioli

Any dairy dessert
Like carrot cake with cream cheese frosting
Butter pound cake
Cheese trifle cups
Cheese canolis
Dairy Choco chip muffins
Cheese buns
Sour cream twists
Cheese danishes
Choco covered cheese balls
Cheese braids
Roll cake with cheese filling

Get side dishes, desserts, baked goods out of the way first.
Apple kugel and its variations (crisps, apple strawberry, apple pear ect.)
luckshen kugel (yerushalmi, salt and pepper, sweet, with cheese ect.)
Potato knishes, doughless knish, potato kugels
Prepare sauce for string beans and freeze, toss erev yomtov and make fresh.
In the main dish department, you can do:
pepper steak
roasts
chicken cutlets
