My sister in law is making Friday night sheva brachos for our niece.
She will be having 40+ people and it will be buffet as she doesn’t have much room.
My family lives 8 hours away driving and we will be several people. I would like to help with the cooking but it needs to be frozen because of the drive.
What could I make either a side dish and/or dessert that I could freeze and bring.

An assortment of Mini trifles for dessert
Potatoe Kugel or a two tone vegetable Kugel for the side

Kugel freezes well.
Dessert you can make compote or apple cobbler.

Challah. Dips. Soup. Chicken/meat.
Vegetable won ton cups. Most baked goods freeze nice.
Whatever you travel with should be put in an ice box with ice packs and left closed. It should stay nice and frozen like that.

You can make a couple of bundt cakes and put together the glaze by her house. You can also freeze cookies. Compote was mentioned above, but you can also make a crunch topping separately and freeze.
As for sides, some ideas are farfel, lachmajeen, borekas, cabbage and noodles, cranberry apple kugel, any sort of rice dish, carrot or other muffins, mini meatballs (more like an appetizer).

You can properly seal compotes in jars - no freezing required.

Any cakes/miniatures you can freeze.
Chocolate truffle logs. Rumballs. Cannolis. Cream cakes. Rainbow cake. Strawberry shortcake. Boston cream pie.
Lukshen kugel. Apple kugel. Deli roll. Cherry/blueberry turnovers. Yerushalmi kugel.

What kind of rice? White does not freeze well and even though brown freezes okay it usually doesnt taste great own its own.
