I purchased a couple of boxes of lasagna noodles and then realized that whoever I'm having here for Yom Tov doesn't really like lasagna.
So do you have any other wonderful recipe ideas I can use lasagna noodles in? These are the type that have to be boiled first. I was thinking of some type of roll up but what filling? What sauce?

I should have specified, that I want to still use it on Shavuos in a dairy meal.

This actually does look yummy. I don't know what artichokes are and if I'd like that. Do you think I could leave it out?

I do pareve spinach roll ups as an appetizer for fleishig meals on yom tov sometimes. Yummy

I didn't realize the linked recipe had artichoke in it.
Use this as the filling:
2/3 of a 16 oz bag frozen spinach, defrosted (or 10 oz box)
1 16 oz container ricotta cheese (2 cups)
2 garlic cloves, minced
1 egg
1/2 tsp salt
1/4 tsp pepper
Proceed with rest of recipe, including shredded cheese and marinara sauce.
ETA: Lol, I see it's basically the same, minus the artichoke hearts (which btw come in a jar near the hearts of palm, but I don't use it in mine).

Would you want a meat roll up with sweetish sauce. It’s very good.

Lasagna Roll-Ups
Shred 3 zucchini. Squeeze out liquid. Saute with 3 garlic cloves until soft. Add 1 lb. cottage cheese and shredded cheese. Optional, mix tomato sauce into it. Roll the mixture into cooked lasagna noodles. Pour tomato sauce over each piece and sprinkle with cheese. Bake covered 350°
