I am looking for a oil based Kokosh cake recipe that's soft and delicious chocolate filling.
And the dough easy to work with.

U can use ur challah recipe. I use a part of my challah dough to make into kokosh cake (no more leftover challah!!). I roll it out, smear on coconut oil and mix of 1 part cocoa and 2 parts sugar. If u want it to be very chocolatey, and less sweet, 1:1 works great too. Roll it up, put in a loaf pan and bake 350° until nicely browned - about 30-45 min, depending on thickness of cake and ur oven.
Fun fact: kokosh cake was invented because Yiddishe mamas in the shtetl had some extra challah dough. So it's not just a great hack, it's the real deal!
