If I make my blintzes today (Sunday) for Shvuos (next Sunday) should I freeze them? How is it best to keep them?
How about cheese cake? Does it freeze well?

I put layers of plastic bags between each layer of blintzes in a foil pan, wrap well with plastic wrap, and freeze.
Cheesecake definitely freezes well, many recipes even call for freezing it for a few hours, but toppings should probably wait until you defrost the cake. I try to cut the cake before freezing it, when possible.

I froze ready crepes and I can't figure out when to fill it. should I do it on yt? before Shabbos and refrigerate?

I made one cheese cake yesterday, and I plan to make 2 more today. They will all be refrigerated until ready to be served.
If you are freezing cheesecake, you need to make sure it is completely cooked off, and then wrap very well in plastic wrap.
