I have an unopened 3lb block of farmer cheese that expired exactly a month ago. I want to make cheesecake and blintzes that use farmer cheese. Would you still use it or is it bad and I need to throw it out?

Taste a tiny bit of it. If it tastes vinegary, sharp, or "foamy", then throw it out.

Do Not Swallow! Spit it in the sink and wash your mouth out with water. Spit out the water.

I usually do not suggest tasting possibly spoiled food, but in this case it's pretty safe.

Thousand percent OK to use

Yeah, if it's sealed tight, chances are that you are good to go.

I did get a bad batch of cottage cheese once, so there is always that .000001% chance that it's gone off. That's why I said do a taste test first.

I second FF. Trust your nose, eye and tongue. Exp date is not holy.
I had forgotten sour cream stuffed back down in one of my fridges. 3 weeks after exp date it was 100% OK. The way you store it is more important.
