I generally substitute oil for margarine - works in most recipes. Here is a good one from Classic Kosher Cooking
Regal Chocolate Peanut Buter Squares
2/3 c margarine (use slightly less of oil)
1 1/2 c brown sugar
1 11/4 c white sugar
1 c peanut butter
4 eggs
1 tblsp vanilla extract
2 c flour 2 tsp baking powder
1/2 tsp salt
6-12 oz chocolate chips
Cream together marg (oil) with sugars and pb. Beat in eggs and vanilla. Stir in dry ingredients. Pour into a well greased 9x13 baking pan. Scatter choc chips evenly over surface. Bake in pre-heated 400 degree oven for 5 minutes to melt chocolate. Remove from oven and swirl choc throughout batter with a knife. Lower temp to 350, and return to oven for an additional 30 minutes. Cut into squares while still warm.
