It seems that most people these days are health conscious enough not to bake with margarine. But why are all the most popular cookbooks still filling most dessert recipes with it? Is there a good margarineless cookbook that I don't know about?

I just substitute coconut oil. You can buy refined coconut oil which doesn’t have a coconut taste.

I find plenty of recipes in cookbooks that don't need margarine.
