I just read someone posted they will make eggplant parm using a different cheese in case guests don't want to wait 6 hours.....
I understand this rule regarding hard cheeses, but I was always under the impression this only applied to the real top quality grated parmesan , not that sprinkle stuff that looks like powder.... is that not correct? Have I been getting it wrong all these years?

I don’t eat meat so I’m the wrong person to ask, but I’m going to go out on a limb and say that different people have different customs. AYLOR or you may at least want to post what community you are a part of.

Most of the parmesan (even the sprinkle kind) say "aged over 10 months " on the label. So definitely has the status of aged cheese

In Lubavitch I was told there is no 6 hour cheese today

But then somebody posted they wait 6 hours after mozzarella, which puzzles me bec it's a soft cheese.

My family minhag is that we dont wait 6 hrs for the exact reason you described!

There are plenty of 6 hour cheeses today. Even in Lubavitch. Maybe some years ago when there wasn’t such a variety of CY cheeses, it was true. But not now.
