Yes in the oven. I’m not being home only for the last day so I can’t leave my flame on. But if your leaving a flame on I’d definitely cook it on YT.

I'm having such a hard time this year thinking of what to make. Shevuos is usually my favorite yomtov to cook for because I love dairy, but this year we're hosting a bunch of family members who can't do dairy and I don't know where to begin.

I'll tell you what I used to make in case it helps anyone:

fish tacos
garlic knots
penne a la vodka
fettuccine alfredo
sushi
salmon and veggie skewers
ice cream sundaes
banana splits
cheesecake
dairy shortbread cookies
cheese blintzes
quiche
enchiladas
lasagna
stuffed shells

Lots of things on your list can be done parve.

Another note in favor of the dairy meal. eating meat is associated with simchas Shabbas/Yom Tov. It’s not Halacha l’moshe misinai.
I grew up having at least 1 or 2 dairy meals in shavuout.
There are competing values to consider also, such as Bal Tashchis and V’Nishmartem. In NY YT starts like 9pm. I can’t imagine eating so much meat so late at night, some of these menus have multiple types of meat/chicken— to eat like this 6 meals in a row? I would be inhaling the Rolaids.
When I make a meat meal I generally make one type of animal protein and keep the rest plant-based. I do have a lot of vegetarians in the family, and it also feels healthier/less wasteful. Just my personal opinion

Went shopping at Evergreen and Wegmans last night without a menu. BH I got food and gorgeous produce and flowers which I still need to arrange. I have a bunch of dishes in mind, but haven't firmed up a menu. This is beyond ridiculous.

Feeling cute, I think I will cook for Shavous this morning. IDK

Make the fish tacos, garlic knots, sushi,
salmon and veggie skewers, and quiche parve.

Keep the lasagna and stuffed shells dairy.

Penne a la vodka and fettuccine alfredo, only use half the pasta with the dairy sauces, and make parve sauces for the rest. You can do a roasted summer vegetable balsamic version for the fettuccine and a blistered tomato version for the penne.

Make an ice cream bar for the sundaes and have both store bought options available.

Banana splits can be another bar, with parve whip cream from a bought bottle included.

Cheesecake would be nice if you can have parve and dairy.

I think you can still serve the dairy shortbread cookies for those who can have.

Cheese blintzes with parve crepes and swap out some of the leaves for potato blintzes.

Leave some enchilada dough over and stuff those with avocado.

Though truthfully, to make things easier on you, you can really make many more delicious dishes that are parve keep the dairy reserved to cheesecake, blintzes and optional toppings for salads and grains.
