So I plan on making blintzes for e very first time next week IH. Wooooohooo!
Whats the best way to wrap them if I dont like the feeling of all the cheese in the middle in one spot, but I also dont want it to leak.
The ones ive eaten in cafes kinda looked like they were folded over in layers.
Does that make sense?

Spread the filling down the center of the circular shaped crepe. You can flatten the filling a bit with a spoon. Gently fold the top and bottom ends of the crepe onto the beginning of the cheese filling. Then take the left or right side of the crepe and roll towards the opposite side. From left to right or right to left. By folding in the top and bottom ends first before rolling , they should be now closed up so that cheese doesn't ooze out.

Like anything else rolled. Spoon the filling close to the bottom edge, leave an inch or so. Fold up the bottom, flip in the sides and roll it up.
The first folds hold everything in place and the rolling holds it all in even if you fry it after.
Experiment with amounts of filling. It depends on the crepe size.

OP I was wondering the same thing. I know it’s after Shavuos and I hope you were happy with however you rolled up your blintzes!
But today I had a bought blintz which was rolled up in layers as you describe so I unrolled it to see how it was done. This is how it’s done:
You have your circle blintz in front of you with cheese on it. Fold in the top and bottom so the top and bottom are now straight horizontally. Then take one third on either side (imagine lines down the blintz dividing it into 3) and fold it over so you’ve now covered 2/3 of the surface. Then take the remaining 1/3 and fold it over on top.
Hope that makes sense to you!
