Why do they need to be stuffed? They're just dark meat boneless chicken legs with the skin still on.
Season or sauce and bake laid out in one layer on a cookie sheet at 425 for about 25 min.

Put in a bowl with oil, lemon juice or fresh-squeezed lemon, crushed garlic cube (fresh or frozen), salt and pepper. Marinate for as long as you have time for (even a couple of minutes or a few hours.) Grill or Broil till done on both sides.

Lay them out to bake on a flat cookie sheet. They won't be floppy. Think of them as cutlets.

We eat them every week and we never eat stuffing. Grilled or briloiked with olive oil and spices and salt.

It's a frum/heimish thing. The first time I told my mother I made capons she flipped out because real capons can't be Kosher.

thanks for your help amothers. I thought capons are always stuffed. I baked them regular (no grill pan) and they look pretty good.

I googled are capons kosher and the first thing that came up was on this site, How are capons kosher ? and it seems that aside from deboned thighs and legs sold under that name, real capons can be kosher.
