I don't bake extremely often, so I don't go through my baking powder too fast.
My cakes are coming out dense and not light and fluffy.
I think it may be that my baking powder is no longer fresh, even though I keep them in an oxo container.
Is there a way to figure out before I bake if my baking powder is fresh, like the way we proof yeast?
What else could I be doing wrong?!
I'm at a loss!!!!
