Don't bother. Challa is not healthy. Neither is sprouted whole what bread. Treat it like desert, something to be enjoyed in moderation every so often--not something you can trick yourself into being good for you. The basis of your diet should be fruits, veggies, healthy fats, nuts, seeds, and small amounts of animal protein and whole grains in their raw form (flour is not a raw form). Sugar, preservatives, packaged foods, and flours should be treated like desert.
I hate the mentality of adding sweet potatoes to chocolate cake or wheat germ to challa to trick yourself into thinking it is healthy. It's not. If something has sugar or flour in it, it is not healthy, period. It doesn't mean you can't ever have it, but in moderation it is totally fine to eat these foods as is, in their normal delivious forms. Eat a slice of challa! Have a cookie! Just know that it is a treat.
the only reason to modify a challa recipe is if someone is sensitive to gluten, meaning that they get symptoms and feel bad after eating it. Personally, I make gf oat challa every week and its a great recipe. I eat one small roll at each meal.

Its the great tasting dips that they sell that are the culprits. You can eat half a Challah, trying a few dips.
