Renee Muller's Our Table has a recipe that calls for a whole bottle of Chablis (750 ml).

How much is a bottle of Chablis?

If its expensive and I use this recipe regularly, can I substitute a cheaper white wine? Which?

They sell cooking wine in grocery. Maybe you can try it. Cheaper.

I dont want to wreck the salmon.

What I did until now is use 1/2 cup of Bartenura White wine and water combined, bec I had it in the house and its good.

I just googled and see its $4.59. Wow, thats relatively affordable, and I dont have to use the whole bottle. Thats probably not much more than what the cooking wine in the grocery costs.

Cheaper wine is safe, because the flavors change and mellow as you cook.

I like to use cheap champagne to cook salmon with mushrooms.

This. Kedem Chablis is cheap and very good for making salmon. Do not waste your money on cooking wine.

It’s actually cheaper than cooking wine. And you can freeze unused wine till next time or drink it 😉
