Theres a 2 hr biking trail in Catskills, for little kids you can attach such wagon/car/seats that are enclosed to adult bike. They rent bikes/helmets/attachments etc

Minniwaska State park has beautiful waterfalls and hikes.
Peekamoose mountain has beautiful waterfalls.
Three Stone Arch Bridge park is stunning, but not really a hike.
The intersection of Ten mile river and deleware river is a beautiful spot to hike up the stream. There are really nice (primative) picknick spots and fire pits.
