There are many faux bread recipes but none that are hamotzi.
Why are you on keto?
If it’s for health reasons I would get a heter.
Otherwise, take the most minimum amount of challah at each meal.
Just know you will be out of ketosis and it takes about 3 days to get back in to ketosis.

Hmm... that seems frustrating to have to go out of ketosis every week and wait three days to get back... Is there no better way?

thanks so much! any other tried and true recipes you can recommend? I'm just starting this journey and would love to hear what good recipes you've found---any type of recipe from meals to snacks/deserts would be appreciated!

Ok, so I did an experiment this week for anyone who's interested. I used ketostix to test on Friday and got dark purple (in ketosis). On Friday night and Shabbos day, I had a sip of grape juice and a k'zayis size roll made with Rorie's mix (btw I do cut the honey to 1 tsp when I make them). Still generally tried to keep net carbs under 20 grams each day (but I don't measure everything, esp low carb vegetables). I tested again after Shabbos and still purple! Maybe a little lighter but definitely purple and definitely still in ketosis! So, you CAN wash on Shabbos and stay in ketosis!
