dh doesn't eat dairy or fish the nine days are so hard for me
I don't know what to make last night was falafel.
any ideas I am going nuts every year

I made milchig tacos last night and it was a big hit! Bought pareve "ground beef" and browned it with taco seasoning. Toppings included the following:

Shredded lettuce
Diced tomatoes
Olives
Corn (from a can)
Avocado
Sour Cream
Shredded Cheddar Cheese (that's the best reason to make the tacos pareve!)
Taco sauce

My picky eaters who were too scared to try fake meat inside their tacos made their own taco salads with whatever toppings they wanted.

Warm crusty baguette stuffed with fried slice of Haloumi cheese for you and fried tofu for him, with roasted eggplant and pesto.

Lentil or black bean burgers layered in buns with all the fixings.

French omelettes or baked frittata with warm rolls, salad and soup.

Stuffed peppers with quinoa and pine nuts. Serve with roasted baby potatoes and green beans. You can add cheese to yours and the quinoa and nuts combination should be enough protein for your dh.

Try the beyond burger. Use your regular burger bun and toppings.

look up vegan recipes. There are people who eat like that 365 days a year!

Plus, you can do eggs. (quiche, fritatta, souffle, plain old scrambled eggs or omelettes)
