We love the mountains.. would want to go somewhere with good air and privacy (and a shul) for around 10 days

Shabbos is hard. Anything walking distance to a shul will be a fortune or hard to get. But if you can drive to a shul there are more options
Lakewoodhosts and reservekosher should have some options walking distance to shul

You'll have better luck in Monsey or Lakewood than in the Catskills.

There are houses with pools walking distance of multiple shuls in South Blooming Grove.
(Monroe area)
