Diabetic Shabbos day

My husband was recently diagnosed with diabetes. What are some Shabbos day dishes I make him that can be served cold? He’s currently not eating any carbs/sugar except veggies (and some fruits).

My mother-in-law is diabetic and she puts carrots and sweet potato in the cholent for herself. Liver and eggs are also not carbs.

I will not get into the debate of whether a person should have carbs or not, the role of fiber, or glycemic indexes... however, just an FYI, sweet potatoes are carbs.

Ive heard of cauliflower in cholent.

salmon with no sweet dressing baked, cooked salmon with no sugar.

egg/liver veg.

coldcuts / coldcut salad.

broccoli/cauliflower kugel warm with no flour/sugar

chicken soup

there is sugar free gefilte fish

Shalosh seuda
ww matzo
tuna/lox/deviled eggs/ egg salad/ avocado/ avocado salad/mock potato salad from cauliflower & veg/veg salad/ ceasar salad with lite dressing/ no sugar only splenda/no croutons/ nuts is fine/ mushroom salad

I've made schnitzel using falafel mix as a coating.
There are a lot of meat cuts that can be served at room temperature.

Make all types of fish. Sometimes I will put out 5 or 6 different kinds. Think cold tuna steak with wasabi, cold cod cakes, roasted salmon, seabass, gifeltte fish. You can make gifeltte fish with splenda. It's not my taste, but my friend makes this for her shul and people love it.

Salmon. Eggs. Non-carb bread (I've forgotten what it's made of - it's not hamotzi) with dips like hummus and techina.

Schnitzel with nut crumbs instead of breadcrumbs.

Instead of cholent: meat stew with kohlrabi, onions and mushrooms. Came out amazing, everyone enjoyed it.
