Start with a small pan so it's not so overwhelming.
Will you be using a food processor?

I have a good small recipe, always works nicely for me:
5 medium potatoes (grate them in your food processor - I have a mini one and it just all fits with the onion)
1 onion (also in the food processor)
3 eggs
1/4 cup oil
1 tsp salt.
Mix it altogether. Stick it in a small (oiled) pan. Bake for 1 to 1.5 hours.
