Thanks. This recipe says it should be done in a tube pan. Have you tried it in a 9x13?

I do it in 9x13 and cool it in the pan on a rack. It’s delicious

Marble Chiffon (Spice & Spirit - purple book)
8 eggs, separated
pinch salt
2 c sugar, divided equally
3/4 c oil
1 tsp vanilla
2 c flour
1.5 tsp baking powder
3/4 c orange juice
2 tbsp cocoa powder
preheat oven 350 F. 9x13 pan or LARGE angelfood type pan. recipe says UNGREASED PAN.
separate eggs
beat whites w/ salt until foamy. add 1 c sugar gradually. beat until stiff, set aside.
wash beaters.
in another bowl, beat yolks with other cup of sugar and add oil and vanilla. add flour and baking powder with juice alternately until well mixed.
fold in eggs whites. pour half into pan.
add cocoa to remaining mixture and mix well. pour this over 1st batter and "marbelize" it.
bake approx 45 min. mine takes longer; can be up to 1 hr in tube pan. be careful about checking it too early because it can fall. only check after 45 min unless of course you think it is over baking. all ovens are different.
recipe says (if using angel food pan), to invert and let cool THREE HOURS upside down so it doesn't fall.
I've never made it in a 9 x 13 so don't know if it sinks or not after taking out.
