When planning a (Bar Mitzvah) Kiddush, how much food should we plan for? We don't know how many people will show up, even if we know how many invitations we sent out. How do people calculate this?
We are ordering food (Shul doesn't allow home baked goods), and not sure how much to order . . .

Speak to the shul or others at the shul who've made such a kiddush. It depends on the usual crowd there.

are other people from the shul invited besides your invitees?
The shul should have some sort of idea of numbers since they make a kiddush every week. Do you want people to go home full? Do you mind having leftovers?
Have a variety of food. Fruit, veg, savoury food like fish or herring as well as cakes and cookies.

We are not using a caterer, that's why we are trying to figure it out ourselves. The Shul told us how many people they have davening there, but we invited other people who daven at other shuls. The shul said they did not know how much to estimate.
How do caterers estimate? Anyone here ever done their own Kiddush before?

Usually a 9×13 pan of potato kugel is estimated for 12-15 slices/people.

what are you serving? the more types of food you serve, the less you need of each. Its not lunch, its just a kiddush.
At our kiddush in our shul for about 70-100 ppl they have maybe 5 or 6 platters of mixed cakes and cookies, (maybe more...they have tiered cake stands they use) a few of gefilta fish, 2 or 3 cracker and herring/egg salad trays, 2 or 3 cheese and cracker trays, a few platters of fruit, a few of veggie sticks and chummus. Plus crisps, pretzels, cookies, candies. Soft drinks and whiskey table, and hot drinks table.
To make it easier envision what you would serve for 10 people and times it by however many you are expecting.
