I was away last Shabbos and the family we went to used a rice cooker. They did set it to cook the rice before Shabbos but opened and closed it several times on Shabbos to get the rice out. My kids asked me if this was ok and I don’t think it is but am not sure why. Does anyone know?

We unplug our rice cooker right before Shabbos. I think the reason it would wrong to keep it on "keep warm" and use it over Shabbos would be because it's still "al ha'esh" you don't have a blech and aren't removing the pot from the fire to take out the rice. It's like a chulent pot - we take out the pot in order to use the chulent and we normally don't put it back (if you do that's Chazarah and there are many conditions).
