Sure! Baked. I do it all the time. I sometimes substitute butternut squash and it's perfectly fine too.

Its a mixture of mashed sweet potatoes combined with some other ing formed into balls & baked. Recipe is in BC#2. Instead of topping with slivered almonds, I coat with c.f. crumbs. I place in muffin tins.

6 sweet potatoes
1 egg
3 T brown sugar
2 t vanilla sugar
1 T oil
bake s potatoes at 450 for 1 hr.
Remove peels & mash. mix with rest ing.
Form scoops & place onto lined cookie sheets. garnish with slivered almonds.
Bake uncovered at 350 for 1/2 hr.
Yld 10-12 scoops
