I made hard eggs and put them in cold water after to cool. I left them in the cold water overnight by accident from about 9pm till about 8am. Is it still ok to be eaten shabbos?

Just make new ones.
At $2/dozen and less than 10 minutes to make, it doesn't seem time the item to risk.

In the old days hard boiled eggs were taken on long trips because they don't spoil quickly. Open one and if it doesn't smell bad they're fine.

Unless your kitchen was unusually hot, they are fine. You'll know once you shell them, anyway.
