What's the best substitute for milk in a cake recipe?

Personally I've substituted either water or soy milk and both times it tasted good. I think it depends on whether you like the flavors. Each of the soy, rice, almond etc have their own flavor which you have to like. Water won't add any different flavors.

Unflavored, unsweetened almond milk does not affect the taste as far as I can tell. If nut allergies are a concern then go with water.

I use water and it turns out fine. I want to avoid almond milk in a cake because it's a nut ingredient that's not obvious and because my kids can't take things with nuts to school for snack.

I use orange juice.
I used to use non-dairy creamer but it's unhealthy so I switched to OJ.

I use orange juice. It can affect the flavour, but since I think that chocolate and orange is a great combination, I'm happy with that. (So is cinnamon and orange. And most things and orange.)

If it's a more delicate flavour and for once I don't want the orange juice influence, I'll dilute it hAlf and half with water.

I like orange juice in some things but others it totally destroys so handle with care when substituting. Also note that it adds acid, which could interact with other ingredients. I'm not enough of a kitchen scientist to explain how but I know I have seen this.

When I used rice dream I did not get good results so I don't do it anymore. Makes cake "heavier "!
