What meat would you recommend for a chunky vegetable soup for yomtov? Want the meat to have a nice texture and also give a nice flavor to the soup.

I found flanken to be very expensive to add to a soup where a lot of the meat looses its flavor.
I use a net bag of beef bones and chunks of beef stew
