I bought this roast. I think it is dark chicken coated with pastrami spice. Does anyone know how to prepare this? How long should I bake this and at what temp? Does it need water or a sauce of some sort? It is not vacuum sealed.

It's a very salty roast. Rinse it well and cook it covered in water till boiling. Spill the water. Add new water and cook for 3 hours. Allow to cool overnight before slicing. Rewarm and serve with any sauce you like.

I think it depends where the chicken roast was bought. Some stores are salty and others aren’t and can be baked. The dark chicken roasts I stuff with pastrami , make a sauce on top and bake in the oven.

Make your favorite glaze and spread over roast in a snug high pan (5 pound loaf pan).
Cover and bake at 400 for 1 hour and 45 minutes.
Uncover and bake at 500 for additional 15 minutes until golden.
Chill before slicing.
