I defrosted too much chicken last night (let it defrost overnight in the fridge). Is it safe to bake it on Sunday? It would be almost 3 days.

I would, I'd probably bake it early Sunday morning or whatever.

I would just cook it today. Make it with a different sauce than the Shabbos chicken and it won't feel like leftovers.

Do you know how fresh it was when you froze it originally? Did it sit in the fridge first? If it did, do not keep it raw until Sunday.
Even if it was frozen fresh, it will be stinky by Sunday, so decide if that's ok. I've done it in emergencies but it's not the best.
