I know this is really old, but was just wondering, isn't that a lot of eggs for one kugel: 4 for each layer, totals 12 eggs.

I make it with 2 eggs per layer and it's delicious. Never any leftovers.

Can you make this with carrots instead of sweet potato? If you do, would you need one or two pounds of carrots?

Place the broccoli layer on top of the breadcrumbs. Bake this first layer for 20 minutes.
Add the cauliflower layer on top of the broccoli layer. Bake for another 20 minutes.
Place the sweet potato layer on top of the cauliflower. Bake for the remaining 20 minutes.


Im considering making this. Since 2009 have you made any changes to this Tri-Colored Kugel recipe, or found a better/easier recipe for a 2 or 3 tone Kugel?

Also, 5 pounds of asst vegetables only make one 9 X 13 kugel? tia

Balabusta choice 1 has a very easy recipe. It's a 2 Tone kugal.

No changes. It's a high kugel that slices nicely into 3tone squares.

It might then be too liquidy from the milk. Maybe cut down on the milk, if you don't mind a denser kugel.

If you Google layered vegetable kugel, there are a few other recipe options.

I wouldn't. Use a recipe with starch added and no extra liquid.
