Some of the best advice I ever got was to keep a notebook and write down which dishes went over well so you can use it from year to year. I've had my Rosh Hashana menu planned for the last few years and if I feel I have the time and energy I can always add or substitute something.

For Sukkot we like lots of soups because of being outside. And creamy cakes for breakfasts. Matzah ball soup, butternut squash soup, broccoli veloute, couscous (meat and veggies). Black forest cake if you don't mind a real patchke, Hershey's cake with store-bought frosting if you do mind a real patchke Wink

Tomato beef soup: I am still looking for a good recipe. I saw some on kosher.com that had cabbage but I prefer without. I may make one up, using flanken (that I will sear first), and canned whole tomatoes and crushed tomatoes.

Eggplant and tomato is basically pareve eggplant parm Smile I buy the breaded eggplant, broil it, layer pasta sauce + eggplant + sauce + eggplant + sauce, then bake covered for about 30 min.

Didn’t decide exact menu but here’s what I have in my freezer
Fish balls in tomato sauce and sautéed veggies

Mains- didn’t make yet but prob minute steaks and chicken rib roast maybe capons stuffed with Kishke

Butternut squash soup with fried pastrami bits served on top
Mushroom barley soup

Day meals plan to serve first:
Kale salad
Quinoa salad

Mains:
Turkey breast with lots of herbs, honey and lemon
Sticky drumsticks
Overnight roast with sweet sauce
London broil cooked medium rare

Is the netted one cured? Not sure about it. I use the chicken breast with the bone. I put olive oil, lots of fresh garlick, herbs, lots of honey and a little soy sauce or lemon juice (either or). I bake it on 400 or 425 for about 45 minutes. Then I check on it. (If it gets overbaked it dries out).

Love these menu threads! I'm having lots of company for the first days, being away by family for shabbos and the second days. Succos seems to be speeding up on me. I can't beleive its one week to succos! I'm hoping this helps me get organized:

So here is what I've made and frozen so far:

Veal roast with cauliflower, carrots, onion, mushrooms, celery
Regular meatballs and veggie meatballs (meat is mixed with finely shredded mushrooms, onion and butternut squash-- YUUUUUM!)
Spicy meat crumble with onion, tomato, mushrooms to serve with hummus
Gafilta fish
Chicken soup
Matza balls
stewed zuchinni (for pastaless veggie lasagna)
apple cumble
carrot muffins
chocolate chip peanut butter cookies
Amaretta pound cake
strawberry-cherry-apple compote
Raspberry sorbet

Here is the stuff I'd like to make this week:

Peanut butter fluff (for the peanut butter cookies. We like to make them into cookie sandwhiches)
Cinnamon buns
Cilantro tilapia with red peppers and carrots
Some sort of soup. I need a good recipe. I have no ideas.
Roasted veggies (peppers, onion, mushrooms, tomatoes) for a feta cheese-roasted veg-baby spinich salad.

And last, stuff make fresh for the meal because I don't think it tastes as good if you make it and freeze it:
Chicken bottoms with sliced potatos
grilled chicken cutlets
Mashed potatoes with sauted onion and garlic
potato kugel
lemon carrot salad
garlic green beans
roasted cauliflower
cottege cheese and pumpkin pancakes.
I will also put up a chulant because some of my kids looooove chulent and can pretty much live on it. I have some kids who eat a heaping bowl of chulent for shabbos breakfast. 7am they are slirping up beans and barley. Whatever works!

I think the meals will be like this:

Sunday dinner: chicken soup, gafilta fish, meat crumble, veal with veggies, carrot salad, potato kugel
Monday lunch: gafilta fish, meatballs, chicken with potatoes, grilled chicken, green beans, carrot muffins, apple crumble
Monday dinner: pastaless lasagna, talapia, feta cheese roasted veg salad, cottage cheese pancakes, maybe a dairy soup if I can find one that sounds appetizing
Tuesday lunch: all the leftovers, plus mashed potatoes because I think the other potatoe dishes will be gone by then.
Tuesday dinner (not a seuda, but still gotta feed everyone): Dairy leftovers, plus homemade pizzas and a pot of pasta.

I'll also serve challah and dips for each meal.
