How to make soft meat patties?

DH complained that the ground meat hamburgers for RH were hard textured (and he is not a picky person at all).
Does anyone have some magic tip how to make the ground meat patties soft? DH says that a small amount of baking soda will do the trick. Please help ladies!

I find you have to be very gentile when you mix the meat and form the patties. Too much handling makes the meat tough.

Use mashed potatoes and eggs as the binder.

I personally love firm all meat burgers and softer meatballs with fillers.

Dont over-mix. Use meat that's 80% meat and 20% fat. Cook in a cast iron pan on stovetop rather than broiling.

What's your recipe? Let's start from there.

I prefer chicken ones, with ground zucchini and squash to keep it together.

I put challa in mine to make it fluffy and when frying first put it on high flame for about a minute and then on low so it cooks through without drying out and burning

I use half ground chicken and half ground meat. Combine with eggs, sauteed onions, and flour/matza meal. I prefer baking them to frying, and it's important to not overbake them.

Thanks for all tips ladies.
Recipe from Julia Child and I use cast iron pan on stove top.
