How long should I roast the rib roast? It's a 3-bone roast.
I have a meat thermometer; do I stick it in the roast and leave it there until it reads the correct temp?
Any tips for recipes or roasting methods?

If you have a meat thermometer that can stay in the oven while cooking that's always works well.

The method I always use is 30 minutes per lb. at 325°
Once you take it out of the oven, it needs to sit covered/tented for 10-15 minutes to retain its juices.
This cut of meat should be served fresh. It doesn't really work to freeze.
