My husband is doing keto and I would love some inspiration to do something besides roasted cauliflower.

Please nothing with tomatoes.

Mash Cauliflower
Veggie kugels - just veg, egg, season, spinach, broccoli, zucchini
Sautéed cabbage - like inside of egg roll
Sautéed mushrooms or stuffed mushrooms
Any veg roasted
Asparagus
Roasted radishes
String beans
Jícama or kohl rabí can be diced and sautéed with paprika, turmeric, and other spices, like hash browns
Eggplant
Pickles
And of course
Salad

I make a very yummy parve cream spinach
Out of cauliflower (for the cream) spinach and nutritional yeast, salt of course

Last night I made asparagus hemp “risotto” which was pretty good. You can use mushrooms or spinach instead of the asparagus.
Sautéed arugula (or spinach, or kale) with mushrooms.
Sautéed enoki mushrooms. We call them spaghetti mushrooms in our house.
Zucchini spinach hash with runny egg yolk (or without). Similar to a shakshuka.
Sometimes I make wonder noodles. They come in a different shapes so you can make fried “rice” or some kind of “pasta” dish.
All types of roasted veggies. Broccoli, radishes, patty pan squash, zucchini, eggplant.
Frittatas

I don’t care much for the wonder noodles, but when they are boiled in chicken bone broth, YUM 😋

Roast frozen Brussel sprouts until dark brown with a little grape seed oil and salt. Deelish!

Grilled asparagus.

Grilled mushrooms.

Grilled zucchini.

Sliced Avacados with salt.

My husband doesn't love tomatoes, but will tolerate sauce, would that count? I may have some ideas.

They definitely need something to elevate them. Like sauce or veggies. I don’t eat them plain either. I’ll try the soup.

How about a great chicken stir fry?

1/2 head cabbage
1 bok choy
3 scallions
4 cloves garlic
1 large onion
1 red pepper
1 green pepper
5 large mushrooms
2 tablespoons toasted sesame oil
2 tablespoons olive oil
2 tablespoons soy sauce(or Bragg aminos)
4 large boneless chicken breasts

Put the sesame and olive oils in a large skillet. Slice chicken into strips and the cut each strip in half. Cook covered in the skillet, turning occasionally until cooked. Chop all vegetables except the peppers. Remove the chicken with a slotted spoon and leave the juices in the pan. Put in all the vegetables and add the soy sauce. Cook the vegetables down. Cut the peppers into thin rounds and add at the end. Add in the chicken and cook for a few minutes.

No need for a side dish.
