Vinegar is the only ingredient in mayonnaise that isn't in all cakes.

I have a choc cake recipe w vinegar. Not sure what it does but tastes fine.
Orange vanilla coke! Really?!

The same family that made mayonnaise cake made mayonnaise salad. It was frozen, and they said it was like ice cream.

Vinegar combined with baking soda creates chemical reaction and produces lots of tiny bubbles that help your cake to rise as it bakes. We’ve always used it in all recipes that call for baking soda. Nothing new.

It reacts with the baking soda and makes it fluffier! (Think 3rd grade volcano project)
Orange vanilla coke is the only flavor I'll drink. It's so yum.

So you would eat cake that made out of oil, eggs, sugar, salt, lemon juice, but won’t eat one that uses the same ingredients premixed? 🤷‍♀️

The recipe for an eggless chocolate cake that includes baking soda and vinegar has appeared here many times (do an Advanced Search for the words cake and vinegar).

If you want a pareve buttermilk sub you can use soy milk and vinegar (or lemon juice)
