Need a menu - help

Does anyone have a 2-week menu they can share with me?

Needs to:
*include breakfast, lunch, supper (sandwiches are fine, but I need a list of what to put in them so I can make a shopping list)
* based mostly on grains, legumes, and veggies, some dairy/eggs, meat only for Shabbat
* doesn't require special or expensive ingredients, or lots of pre-prepared foods (they are expensive here)
* has lots of stuff that can be easily made ahead of time

Every previous menu I've tried has flopped but we really need to get on a grocery budget.

It's easier to write what they don't like.

I have a child who won't eat meat and another who won't eat chicken. A child who hates omelettes and stir fry and ketchup and sweet potato, and a child who won't eat red pepper. And a baby who eats everything but still only has 2 teeth so needs foods that are soft and not choking hazards (so anything with pasta, for example, needs an adaptation for baby).

Other than that, anything goes/ depends on day and mood and can't be known ahead of time.

Maybe pancakes made ahead and frozen, egg muffins also, instant oatmeal or slow cooked steel oats in the crockpot for breakfast? That could be a start but really need your input to make this happen.

Sounds like you need to keep it simple. Without knowing what your family likes it's hard to know what you should make but here is what we do.

Breakfast: yogurt with fresh fruit or oatmeal, juice, coffee. Occasionally, omelets.

Lunch: Peanut butter and jam, Tuna salad, egg salad, sliced cheese sandwiches for the kids, for me, a salad with some kind of protein on it.

Fresh fruit or veggies, strung cheese, nuts and whole grain muffins for snacks . I rarely serve dessert during the week but there is always a pan of baked apples in the fridge.

Dinner: simple roast chicken, meatloaf, tofu stirfry, broiled fish , omelets, hearty meal in a bowl soup. Cauliflower, brocolli, green beans, or salad. Baked or roasted potatoes, baked or roasted sweet potatoes, rice, quinoa.

I meant they like everything else. Very Happy There's a list of what they don't like, most other things I've offered they eat (other than random days when they "don't like" their favorite foods).

bf: boiled eggs, cornflakes, oatmeal, round rice boiled in milk with cinamon,


lunch: ww tuna sandwiches with sliced cucumbers, waffles with jam, tunapattyburgers with picles, ww pizza, egg n salmon wrap with lettunce...


supper: vegetable soups (mushroom, pumpkin, carrot, etc), burgers, hotdogs, lasagna, pasta, steak, meatballs, meatloaf, mashed potatoes with mushroomgravy and fried saussage, onionrice with fried beef n veggies...

Sunday: Short order cook eggs (scrambled, sunny side, eggs in a frame or pepper toast, tomato slices
Monday: Steel cut oats put up in the crockpot night before. Yogurt with strawberries cut night before.
Tuesday: Ready hard boiled eggs (slicer on table for kids to use), defrosted bread, baby carrots.
Wednesday: Pancakes & French toast sticks warmed from freezer, with maple syrup.
Thursday: Egg muffins warmed from freezer.
Friday:
Saturday: Cereal & milk

Since you'll have hard eggs cooked up on Sundays, individual portions of eggs pancakes French toast in the freezer, and cereal on hand, you can offer different choices to those who are picky that morning.

Lunches:
Sunday: Mac n cheese
Monday: Tuna sandwiches (prefrozen to go)
Tuesday: Sliced cheese sandwiches (prefrozen to go)
Wednesday: Peanut butter sandwiches (prefrozen to go)
Thursday: Turkey sandwiches (baked, sliced and prefrozen)
Friday: Cream cheese sandwiches (prefrozen to go)
Saturday: shabbos meal

Snacks:
Fruit, snack bags, water bottles on the go
Fruit, pretzels, popcorn at home

Dinners:
Sunday: Black bean tacos and fixins and shabbos leftovers
Monday: Quinoa stuffed peppers in crockpot, egg fried rice
Tuesday: Lentil sloppy Joes in crockpot over pasta that was cooked, drained, greased and sealed Sunday
Wednesday: Baked ziti (prepped & frozen Sunday, thawed night before, baked before dinner) cut vegetables
Thursday: Split pea soup in crockpot, thick slices of bread from freezer toasted
Friday: Shabbos meal
Saturday: Homemade pizza

I can’t help you with the vegetarian part of this but I can tell you that since we stopped buying processed food and started eating real food, our budget for food is similar but we eat way better, with more meat, chicken and fish as well as cheese, dairy and veg. We don’t even need a pantry anymore. Don’t underestimate the cost of things that come prepared in boxes. Fresh whole food is similar is price to a processed menu.

If you have time you can make freezer pancakes or French toast

Lunch soup and sandwich
Soups can be made in big batches ahead and frozen
Lentil
Butternut squash
Vegetable
Tomato rice
Bean soup

Sandwiches-
Cream cheese
Grilled cheese
Tuna salad
Egg salad
Chicken salad (from leftover chicken)


Dinner
Protein / Starch / Veg
Lasagna or Bakec Zitti and Broccoli
Tuna patties, pickles, tomato, pepper slices, baby carrot and a bun
Chicken and rice casserole with string beans
Meatloaf (can be stretched) mash potatoes, corn
Bean chili, rice, green salad

Snacks
Apples
Apple sauce
Bananas
PB&J sandwiches
Bake your own cookies, cake, etc.- you can control ingredients to make it healthy
