2 bunches of celery - now what?

Any suggestions as to what I can conjure up with 2 bunches of celery? Not soup. We are a couple with a very young family, so salads will mean taking a while to get through the celery... TIA Smile

They are yummy in fried rice.

Saute a couple of sliced onions, three stalks of celery (cut on diagonal if you want to be fancy), a couple of sliced peppers if you like 'em. Cook til everything is a bit limp or just starting to brown. (If you really want to use up celery you can use more!)

Add a lot of cut fresh mushroom now & cook a few minutes til soft, or add a can and proceed to next step.

Add 2 cups cold leftover rice. You could also cook up minute rice, though cold works better. Or use quinoa, or leftover macaroni for that matter (but don't cook so long). A couple of spoonsful of soy sauce. A can of slice water chestnuts if you look.

Cook all this for 10 minutes, stirring often.

At this point, if you want, you can add a can of tuna or leftover shredded chicken or meat for a heartier meal, but you can skip this step too.

Beat up 3 eggs. Add to pan and stir until the eggs aren't runny.

Meal in one pan. This will serve a few people, depending on how hungry they are : ) You can also warm up the leftovers for lunch or even eat cold.

A lot of ants on a log for snacks?

Celery sticks and tuna or chumus for lunches this week?

Why no soup? You can clean and chop the celery and freeze it to throw into soups in the future.

Ants on a log is celery peanut butter and raisins or chocolate chips on top kids favorite

If you take it out of the plastic and wrap it in foil it keeps a while in the fridge without wilting. Then you don't need to use it all at once

yes! khoresht kerafs! this is what came to mind right away! So delicious! I glanced at your recipe though and the one I was given used chicken cutlets not beef. I used to teach in a Sephardic school with mostly students of Persian heritage and when I would invite my students for Shabbat I would ask the moms for recipes. This was my favorite! Actually I think the mom told me it's often made with beef but she made it with chicken. This is the best way by far to use a bunch of celery imho Smile

I also remember that Spice and Spirit has a recipe for chicken and celery that uses up leftover soup chicken which I made a couple of times and is pretty good.

I chop up any extras I have and freeze for future soups and meat stews.
